PEANUT BUTTER COOKIES
Ingredients ½ c butter room temperature 1 c lite brown sugar ¾ c creamy peanut butter 1 egg ½ tsp vanilla extract 1 ¼ c flour ½ tsp baking powder ¼ tsp salt Granulated coarse sugar to roll dough in
Directions Preheat oven to 350 degrees Cream butter and brown sugar . Add peanut butter mix until blended Add egg , vanilla mix until blended In separate bowl mix flour baking powder and salt . Add dry ingredients to wet ingredients , mix until blended Scoop enough dough to make 1 ¼ inch dough balls . Roll in coarse sugar
Place dough balls 2 inches apart on non-stick baking sheet or place parchment paper on cookie sheet to prevent from sticking to sheet pan .
Press dough with fork north to south then east to west to score cookies
Bake for 9 to 10 minutes . Let cool for 20 minutes before removing from sheet pan .
CHRISTMAS TEA BREAD
Ingredients 1 ½ c flour 1 c brown sugar 1 Tbl baking powder ¼ tsp salt ¼ c oil 2 eggs 1 c orange juice ( pineapple juice works too ) 2 cups of rehydrated dried fruit in cognac ( cherries , cranberries , pineapple , apricots . ½ cup or each dark raisins and golden raisins 1 c chopped walnuts
Directions Add dried fruit to bowl , add cognac just enough to cover . Let sit on counter over night to rehydrated . Drain cognac .
Preheat oven to 350 degrees . Grease 4x8 inch bread pan with cooking spray or butter .
In mixing bowl add all dry ingredients . Add oil , eggs and orange juice , mix until smooth . Fold in rehydrated fruit , raisins , and nuts to batter . Bake for 50 to 55 minutes or until toothpick comes out clean . Cool for 30 minutes before removing from the pan .
