Chicken Paprikash ( Chicken Paprika ) - Hungarian Stew
Traditionally it is made with chicken , onions , garlic , tomato , paprika , salt and pepper . Many different techniques on putting this stew together . Some boil the chicken while others sear the chicken . Some add stock to the stew making more gravy while other only use the juices stewed from the chicken . Adding sour cream or flour to the stew thickens the broth to make a heartier stew . Simmered on the stove top or in the oven . There are many variations of vegetables that you can add to the stew if you fancy . Mushroom , celery , green or red pepper are good options to add to your chicken paprikash . Any way you prepare it , it still will turn out to be stew .
Here is my version .
INGREDIENTS : 6 to 8 pieces of chicken thighs and drumsticks ( Alternative : cut up whole chicken in serving size works too ) 1 large Spanish onion finely diced 3 cloves of garlic minced ( garlic lovers use lots more !!) 1 green or red pepper finely diced
1 small box of mushrooms slice ( 8oz ) 2 tsp salt 2 tsp black pepper ½ tsp red pepper flakes 3 oz tomato paste 3 to 4 rounded tablespoons of Paprika 2 to 3 Tbls olive oil / cooking oil 6-to-8-quart stock pot or Dutch oven
DIRECTIONS :
Sauté onions until glossy or translucent in oil . Add diced pepper and minced garlic . Sauté another two to three minutes to soften . Push cooked vegetables to the side of pan . Turn heat on high place chicken in pan skin side down let sear for 2 to 3 minutes . Add rest of ingredients except mushroom to chicken . Stir to incorporate . Turn heat down to simmer . Add mushrooms and simmer until chicken is done . About 40 to 60 minutes . ( Alternative method of cooking is to prepare in oven safe vessel and place in 350 degrees for 40 to 60 minutes .)
Traditionally it served over Nokedli , a dropped egg noodle also called Spaetzle in German . I use wide egg noodles that are commonly found in your grocery store .
Serve with sour cream on the side and cucumber salad to accompany .
