Food science and technology Functional foods foods, which are foods that potentially offer health benefits beyond basic nutrition. Examples of functional ingredients are prebiotics, probiotics and phytochemicals.
I am also leading studies on various bioactivities of natural-coloured pigments such as betalains and anthocyanins and their potential applications in food science.
