– from knife skills to the importance of
a clean kitchen – and build from there.
Students train in a professional-grade
kitchen with a large collection of recipes
and fresh ingredients. They learn front of
the house and back of the house opera-
tions, from pastry and baking to catering
and customer service.
The menu at Saveur is seasonal and
as the school year progresses, students
are given less and less time to learn how
to prepare all of the items on the menu.
“Students get three weeks to learn
the fall menu, two weeks for the winter
menu and one week for the spring menu,”
Hosford said. “By the spring, I just hand
them the menu and they should be able
to figure it out. They are ready by then
to handle it.”
The hands-on experience is a key com-
ponent of career and technical education.
“We rely on having customers for lunch
each day we’re open,” Hosford said. “After
all, they’re part of the curriculum. From
taking guests’ orders to preparing and
serving their meals, it’s all part of the
day’s lesson for our students and they
need customers to practice on. We hope
community members will come give us
a try.” n
Culinary students learn knife skills as part of curriculum. They
also learn that the first step to mashed potatoes is peeling and
chopping.
