April is Donate Life Month , and to help raise awareness of organ donation , RCC alumna / student Roxanne Watson has arranged for a return visit by the giant 72-foot Big Idaho Potato Truck . Watson , a heart transplant recipient and nationally recognized donor activist , is working to include organizations like LiveOnNY and WomenHeart to participate in the event , as well as some great cooking by RCC ’ s Hospitality students . http :// bigidahopotato . com
