Join the Microwave dish surf this winter

Always wondering what you can dish up in the comfort of your hostel room, without adding to the fat count of your body? Here are some handy recipes you can try in your microwave without feeling guilty.

Breakfast :

[Blueberry Muffin in a mug]

This muffin is sugar and carb free and it’s packed full of protein and healthy fats, which will keep you full all morning long.

Serves: 1 SERVING

INGREDIENTS

1 egg

2 T golden flax meal.

2 T almond flour

2-4 t of Stevia (Truvia or Gentle Sweet)

½ t aluminum free baking powder

1 flat T coconut oil

¼ C blueberries (fresh or frozen)

butter (optional)

INSTRUCTIONS

1.Crack 1 egg into a coffee cup and whisk it well with a fork.

2.Add 2 T golden flax meal.

3.Add 2 T almond flour.

4.Add 2-4 t of Stevia (Truvia or Gentle Sweet)

5.Add ½ t aluminum free baking powder

6.Add 1 flat T coconut oil

7.Stir vigorously with a fork until mixed together.

8.Fold in ¼ C blueberries.

9.Microwave on high for 1 minute.

NOTES

I make my own almond flour by blending almonds in a food processor until they are a smooth, flour-like texture. This takes 1-2 minutes. You can swop the blueberries with banana or other fruits you prefer. If you would like a chocolate muffin simply add chocolate of your choice, 85% Lindt Cacao, or Canderel will still make this a sugar free and guilt free dish.
