Ever wondered what gives the Chamonix bottle-fermented Cap Classique its vivacious and bright flavour profile, layered complexity and riveting green apple and brioche on the palate?
Well, it all starts with the grapes, which are handpicked and whole bunch-pressed immediately upon arrival at the cellar. The juice is then left to settle in stainless steel tanks for an entire day, before 70 % of it is poured into old French oak barrels to ferment and mature, while the remaining 30 % goes through the same process in stainless steel barrels. After seven months, the wine is refermented in-bottle and kept on the lees for 22 months prior to dégorgment( that’ s the process of expelling sediment from a bottle of sparkling wine, to you and me).
