Ingredients
3 cups all-purpose flour
2 tablespoons sugar
pinch of salt
2 large eggs
1 tablespoon vegetable oil
vanilla essence
milk
Assorted toppings, such as butter, maple syrup, confectioner's sugar, honey, jams, preserves,
sweetened whipped cream, or chocolate syrup can be used to add scrumptious value.
In a large bowl, whisk together flour, a pinch of salt, a drizzle of oil, two eggs and a few drops a vanilla essence. Add milk until the pancake mixture runs off the whisk with a creamy consistency.
Heat a large nonstick or cast-iron pan and moisten the pan with a paper towel dipped in oil.
For each pancake, scoop a small ladle out of the mixing bowl and pour into the centre of the pan while rolling the pan in your hand to evenly disperse the mixture in a thin layer. Cook until surface of pancake is golden brown on both sides and then place the cooked pancake on a plate in a warm oven. Repeat this process until the mixture is finished and then tuck in.
