Burushapik
A savory cheese bread. The taste of Gilgit-Baltistan’ s mountains, traditions, and the warmth of home.
INGREDIENTS
2 cups of whole wheat flour 1 cup burus( can substitute cottage cheese) Water, as needed( to make dough) 1 teaspoon salt Walnut oil or desi ghee, for frying 2 tablespoons honey 1 cup fresh spinach or local greens, finely chopped 1 small onion, finely chopped 1 – 2 green chilies( optional)
INSTRUCTIONS
1. In a bowl, mix whole wheat flour, salt, and water. Knead well until soft and smooth. Cover and let it rest for 15 – 20 minutes. 2. In another bowl, mix chopped spinach, onion, green chilies, and a little salt. You can lightly squeeze extra water from spinach if needed.
3. Divide the dough into small balls. Roll each ball into a small, flat circle. Place some filling in the center, fold the edges, and gently roll again to flatten. 4. Heat a pan or tawa. Place the prepared Burushapik in the pan and cook on medium heat until lightly golden.
5. Apply walnut oil / ghee on both sides and fry until golden brown and crispy.
6. Apply honey on both sides and serve with yogurt, butter, or local chutney.
