POTATO
Chockablock full of protein this salad is easy to make and very filling.

Ingredients:
A handful of new potatoes,
sliced in half and boiled until
soft.
1/2 can of tuna.
3 spring onions, sliced finely.
A large handful of lettuce leaves,
torn into pieces.
1 egg, boiled and sliced.
A dressing of 2tsp of light mayonnaise, the juice of half a lemon, a splash of white wine vinegar and salt and pepper to taste.

Instructions:
Boil the potatoes until tender,
leave to cool and then add to the
other ingredients! Play around
with the dressing until to your
taste, but be careful not to go
overboard on the mayonnaise!
