Ridiculously easy to make, and even more ridiculously tasty, soup is always a winner. What’s more, you can make in batches and have 10 lunches and dinners packed up in your tupperware and ready to take out of the freezer as and when you need. We all know that nipping out over your hour lunch break is easier said than done. Constant traffic and a struggle to find healthy and filling food is an everyday challenge! So we’ve put together a few DIY lunches you can make in bulk and bring through to the office for a quick and easy meal fix. BUTTERNUT SOUP Ingredients: 1 small onion finely chopped 1 medium butternut chopped into small cubes 1 teaspoon of crushed garlic 1 tsp cumin 1 tsp nutmeg 1 tsp cinnamon 1 Lt. chicken or vegetable stock A dash of cream 32 33 Instructions: Throw the onion and garlic in to a large pan on a medium heat and cook until lightly browned.
