Starter • • • Sweet potato wedges Preheat oven to 450 o F / Gas Mark 8 Cut one large sweet potato per person into wedge shapes, add oil (plus salt and pepper if desired) and shake them all together. Spread the wedges out on baking tray and cook for 20 minutes, turning once. Main Sweet potato crusted quiche • • Preheat oven to 375 o F / Gas Mark 5. Lightly coat a baking dish with oil. Layer on finely sliced sweet potatoes, enough to cover the base and sides while overlapping to create a seal. Again, lightly coat this base with oil, then bake for 10 minutes. Fry one onion and two garlic gloves for a few minutes before adding around 250g of spinach and continuing to fry until the spinach has wilted. Drain off any liquid and spread onto the sweet potato base. Beat five eggs together with a quarter of a cup of milk before mixing in any salt, pepper and spices you desire. Pour this over the spinach, in the baking dish. Sprinkle feta cheese over the top and bake for 30 minutes. • • • Dessert • • • Prick the skin of your sweet potato, put it in the microwave for 5-8 minutes, then peel and mash into a paste. Place it in your blender along with fruit of your choice – bananas and dates go fantastically well with sweet pots – plus a cup of milk, ¼ cup of water and some ice cubes. Blend until smooth, pour into a glass and top wit h some chocolate or cinnamon if you’d like extra flavour! Sweet potato smoothie @REPsUK FM 33
