CHT If you could have lunch with any one person in the world , who would you pick ?
MC I would go back a few years and spend time with the Chef from my school who trained me . He really took a personal interest in my well-being and career . At the time , as a young person working crazy hours , I didn ’ t think to make time to get to know him . I would just talk to him and thank him for everything he did for me back then !
CHT If you could go back 20 years , what advice would you give your younger self ?
MC Be more assertive . I think I am generally a nice guy but looking back , there are times where I think I

could have been a little more assertive and selfconfident when pursuing the things that were important to me .
CHT What is one thing on your bucket list ?
MC I have done some crazy things in my life and I think I am done with the crazy now . But one thing I would love to do is travel Asia , visiting China and Japan . When I can travel again , I would also like to go back to Vietnam and spend a month there .
CHT What is your favorite room in your home ?
MC It would be easy to say the kitchen . I spend a lot of my time playing in the kitchen but my favorite room in my home would be my living room . I find peace there .
