ROASTED CAULIFLOWER 1 head cauliflower 3 Tbsp . butter 1 tsp sea salt 2 tsp smoked paprika 2 tsp chili powder 2 tsp garlic powder 2 tsp onion powder 1 tsp cayenne 1 tsp cumin
INGREDIENTS
CILANTRO LIME CASHEW CREAM
¾ cup ½ cup raw cashews
fresh cilantro leaves ( roughly chopped )
1 large garlic clove ½ cup
¼ cup ½ tsp water , or as needed
fresh lime juice sea salt

STEP-BY-STEP DIRECTIONS
1 . Position a rack in the center of the oven and heat to 425 o F .
2 . Trim and core the cauliflower into bite-sized pieces and transfer to a large bowl .
3 . In a small pot over medium heat , melt the butter .
4 . Remove from heat and mix in the salt and spices .
5 . Pour the butter mixture over the cauliflower . Toss to coat butter as evenly as possible .
6 . Lay the cauliflower pieces in a single layer on a baking sheet .
7 . Cook in the oven until browned for approximately 25 minutes .
8 . Remove from oven when finished .
9 . In a small bowl , soak the cashews in room temperature water for 8 hours or overnight ( You can also cover the cashews with boiling water and to soak for 1 hour ).
10 . Drain and rinse the soaked cashews .
11 . Add all of the cashew cream ingredients into a high-speed blender . Blend on high until a super smooth sauce forms . If your blender is having a hard time blending , add a bit more water to help things along .
