TANDOORI SALMON INGREDIENTS
2 Tbsp.
smoked paprika
1 Tbsp.
cumin
2 tsp
garam masala or ground
coriander

ginger, minced grated

plain yogurt

CUCUMBER RAITA INGREDIENTS
1/2 cup
plain yogurt
1/2 cup
seedless English cucumber,
diced small
2 Tbsp.
fresh cilantro, chopped
1/2 tsp
ground cumin
pinch of salt

TANDOORI MARINADE DIRECTIONS
Combine the first nine ingredients in a small bowl and stir
until thoroughly mixed.
To marinate the salmon, pat the salmon dry, rub 3 Tbsp of
tandoori marinade to coat fillets. Reserve the rest for later.
Cover and chill the salmon for 1 to 3 hours in the fridge.
Half an hour before you’re ready to cook, remove the
salmon from the fridge to let it come to room temperature.
SALMON COOKING DIRECTIONS
Grill the salmon over moderate to high heat, turning once
or twice, until nearly cooked through (about 8 minutes).
Transfer the salmon to a platter and serve with cucumber
Raita.
CUCUMBER RAITA DIRECTIONS
Mix all ingredients in a medium bowl. Chill until ready to
serve.
