Don't know about you, but as a working wife (and hitherto mother), the crock pot is my FRIEND!
With the ability to wash, peel and chop fresh veggies the night before and then simply turn on the crock pot before going to work, and having it all tasty and 'warm fuzzies' done when I get home is a HUGE plus in my life!
PLUS the fact that all that goodness is sealed into the meal - nothing lost by boiling veggies and turning out all the goodness! An added bonus is if you grow your own veggies - no preservative, no GMO, no pesticides... SO WHO'S FOR LIVING HEALTHY?
With a large crock pot, you can prepare one meal and freeze the remainder for another night! PERFECT!

Italian Pulled Beef Burgers
Ingredients
2 tablespoons extra-virgin olive oil
1 cup pre-diced onions
1 (17-oz) chuck roast
1 1/2 cups tomato basil pasta sauce
1 cup fried peppers and onions
1 cup mild pepper rings
2 tablespoons garlic powder
2 teaspoons Italian seasoning
6 Bakery French (or regular) Hamburger Buns
Method
1. Preheat large saucepan on medium-high
2-3 minutes. Place oil in pan, then add
onions; cook and stir 4-5 minutes or until
onions begin to brown.
2. Stir in remaining ingredients (except buns)
and transfer to crock pot; bring to a boil.
Reduce heat to medium for 6 hours.
3. Breaking meat up meat using two forks.
3. Serve on Bakery buns.
