Chicken and Shiitake Marsala
Serves 3-4 people
Ingredients:
4 skinless boneless chicken breast
1/4 teaspoon salt
3 ½ ounces shiitake mushrooms sliced
½ cup Marsala wine
2 green onions chopped (about 1/3 cup)
2 tablespoons butter
Directions:
Pound chicken breast to ½ inch thick pieces. Season chicken with salt and pepper. Heat
pan to medium-high, cook chicken until both sides are browned. Set Chicken aside.
Using same pan sautee’ mushrooms until tender (about 2 minutes) stir frequently then
add wine and onions and cook for 30 seconds over high heat. Reduce heat and add
butter stirring until it melts. Serve over angel hair pasta
