RED BEAN BLISS BALLS Makes - 28 balls INGREDIENTS METHOD ¾ ¾ 1/2 cup of natural nut paste (peanut or peanut butter, cashew & almond)  ¾ ¾ 1/2 cup rolled oats ¾ ¾ 1/4 cup shredded coconut ¾ ¾ 1/4 cup sunflower seeds ¾ ¾ 350g canned red bean paste (found within Asian supermarkets) 1. Place all ingredients into a blender and pulse until desired consistency is reached 2. Scoop out small portions with a teaspoon and roll into balls. Coatings can include shredded coconut, ground black sesame or a light sprinkling of matcha powder (athletes, if you’re in the registered drug testing pool – this is a risk, use alternate sources!) Tip: Best kept in the freezer and removed 5-10mins before serving. These are a great fuel tank top up snack for vegetarian or vegan eaters as well as those wishing to optimise their gut health! DELICIOUS SUMMER ICY POLES Coconut Berry Icy poles Prep Time: 5-10minutes. Serves: 6-8 INGREDIENTS ¾ ¾ 2 cups (490g) low-fat or full fat plain yoghurt (Chobani or Yo-Pro are great options) ¾ ¾ 2 tbsp (12g) shredded coconut ¾ ¾ 2 cups (200g) mixed frozen berries *Note: If you only have 6 paddle pop moulds, use 1.5 cups of yoghurt and the same for frozen berries. Nutrient Per serve Energy 325 kJ Protein 6.13 g Fat 1.66 g Saturated Fat 1.44 g Fibre 1.16 g Sodium 71.1 g METHOD 1. In a blender combine the mixed berries until liquid forms. You may need to add some water in the process to create a thicker liquid. 2. Place the plain yoghurt in a large bowl and pour the blended berries over the yoghurt and mix through with a spoon until combined thoroughly. 3. Add the desiccated coconut and mix through. 4. Spoon the mixture evenly into 6-8 ice block moulds and freeze for a minimum of 4-6 hours - ideally overnight. *Note: These are a great dessert alternative in the summer months or to cool down during the heatwaves!
