Cantaloupe Sorbet- 93 calories/serving

Ingredients

1 large cantaloupe, peeled and chopped

1/3 cup calorie free sweetener

2 tablespoons lemon juice

2 teaspoons unflavoured gelatin

1/4 cold water

1 (8 -ounce) vanilla fat-free yogurt sweetened with aspartame

Procedure

1. Combine cantaloupe,sweetener, and lemon juice in a blender or food processor; process until smooth. Transfor mixture into medium bowl.

2. Sprinkle gelatin over cold water in a small saucepan; let stand for 1 minute. Cook over low heat, stirring until gelatin dissolves, about 4 minutes. Add cantaloupe mixture while stirring. Add yogurt, stirring until smooth.

3. Pour mixture into a 8-inch pan; freeze until almost firm.

4.Sorbet is ready to be served! Garnish each serving as desired.

Fudgy Cream Cheese Brownies- 127 calories/serving

Ingredients

3/4 cup sugar

1/4 cup+2 tablespoons reduced calorie stick butter, softened

1 large egg

1 large egg white

1 tablespoon vanilla extract

1/2 cup all prpose flour

1/4 cup unsweetened cocoa

cooking spray

1 (8-ounce) block 1/3-less-fat cream cheese, softened

1/4 cup calorie free sweetener

3 tablespoons 1% low-fat milk

Procedure

1. Preheat oven to 350 degrees.

2. Beat sugar and margarine in a mixer at medium speed until light amd fluffy. Add egg, egg white, and vanilla; beat well. Gradually add flour and cocoa. Pour into 8-inch pan coated with cooking spray.

3. Beat cream cheese and sweetener with a mixer at high speed until smooth. Add milk; beat well. Pour cream cheese mixture over chocolate mixture; swirl together using a tip of a knife to create a marbled effect.

4. Bake at 350 degrees for 30 minutes.
