INGREDIENTS:
1 lb. boneless, skinless chicken
1 (12 oz.) jar of green salsa
1 tbsp canola oil
3 cloves garlic, minced
1/2 onion, diced

Sauté an onion & fresh garlic in canola oil until lightly browned.. Once onion, garlic and chicken breasts are browned, place them in the crockpot. At the end of cooking, we placed some of the green salsa in a small saucepan and reduced the liquid. Reducing the liquid is a great way to add flavor.
Place chicken and salsa in crockpot and cook on low 6-8 hours. Shred the chicken using a fork. Use shredded chicken in tacos, burritos, or as a filling for enchiladas. It can also easily be frozen for later use.
Chicken Salsa Verde
