Ingredients :
● 450gr of smoked salmon .
● 3 green apples ,
● chives and shallot ,
● 200gr of rocket ,
● juice of 2 lemons ,
● a pomegranate ,
● salt ,
● extra virgin olive oil ,
● pepper .
Procedure : Cut the salmon into small pieces , add chopped chives , grated shallot , chopped rocket salad , 1 o 2 tablespoon of oil , pepper , 2 o 3 tablespoons of lemon juice . Cut 2 green apples into small pieces and sprinkle with lemon juice to keep them from blackening . With the mandolin , cut the third apple into very thin slices and brush them with lemon and then shell the pomegranate . At this point add the salmon and the pieces of green apples and season with oil and salt . Arrange the thin slices of apple in the serving dische as if they were petals , after drying them , after in the center using a pastry cutter , creat a turret , decorate with a pomegranate grains , a few strands of chives .
