BANANA COCONUT CREAM PIE
Banana Cream Pie has always been my hands-down
favorite, but my wife prefers Coconut so I decided to have
a little fun and experiment with combining the two flavors.
The result is this truly magnificent Banana Coconut Cream
Pie. The smooth texture and subtle sweetness of the
banana combined with the toasty, crunchy coconut topping
is a perfect combination and is sure to make everyone
happy! I brought this to a party once and could not figure
out why it did not appear right? Then I remembered…I
forgot the sugar! My wife made me serve it anyway so we
called it a guiltless dessert! lol
Serves 6-8
Pie Dough
4 large egg yolks
1/2 cup sugar
2 tablespoons cornstarch
1 1/2 cups whole milk
1 vanilla bean, split and seeded
2 tablespoons unsalted butter
3/4 cup sweetened shredded coconut
1/2 teaspoon pure vanilla extract
3 ripe bananas, sliced 1/4 inch thick
1 tablespoon lemon juice
Whipped Cream
3/4 cup shredded sweetened coconut, toasted
