Why not make that sumptuous Italian favorite, fettuccini alfredo, at home where you can enjoy it in privacy and be as mushy as you want? (it's also lower in fat than the restaurant version, but you'll never know the difference) ingredients 2 tbsp. olive oil 2 tbsp. butter 4 tbsp. flour 2 cloves garlic 2 cups chicken broth 1 cup milk 1/2 cup grated or powdered parmesan cheese 1 box regular or whole wheat fettuccini noodles Simone Beaudelaire is the pseudonym for a mild-mannered high school French teacher. Cook noodles according to package directions (you may have more than you need, depending on how much sauce you like on your noodles) Drain thoroughly Finely mince garlic. Heat chicken broth in microwave or on stovetop until almost boiling (it's okay if it boils) Heat olive oil in a saucepan gently over medium heat. When it is warm (not smoking) add garlic and cook briefly, until garlic is slightly golden. Add butter. When butter is melted, add flour and whisk. Should make a paste. Let cook until the white color of the flour darkens slightly (not browns, just looses the raw flour look. Should be slightly golden). Add chick broth while stirring until thickened. Add milk whisk and wait until it thickens. As soon as the mixture is hot, turn off the heat and whisk in the cheese, little by little. If mixture becomes too thick, add a little more milk. Toss pasta in sauce and serve. For a more complete meal, add steamed broccoli and pre-cooked chicken
