Healthy breakfast recipe by

Ripe plantain arepa

Ingredients:

- 1 ripe plantain

- 1/4 cup of raw oats

- 1/4 cup of corn flour or almond flour

- 1 egg white

- 1/4 spoon of cinnamon

- coconut oil spray

- 1/2 avocado

- 8oz of shredded chicken

How to cook it:

Boil the plantain with the skin at medium temperature until the platain is softened. Take it out of the water and peel off the skin. Let cool. Once the plantain reaches room temperature, with a fork, mix the rest of the ingredients until obtaining a thick and maleable mixture. With the hands divide the mixture into several separate balls and flatten them out to create a flat circular shape. Spray coconut oil in a non-stick pan and place the arepas until they reach

a golden and hard surface, then flip them around, repeating the same process. Once they are ready, remove from the heat and let them rest for five minutes. With a knife, open the arepas sideways to remove the excess of though. Heat the oven to 360°, place the arepas for approximately 20 minutes and then remove. Let rest for five minutes. Place the avocado and the chicken inside of the arepa. Now you can enjoy an easy and healthy breakfast that you will love!
