This months recipe is YUMMY and will make your world, and tummy a better place:
Pumpkin and Lentil Soup
3 Tbs olive oil
1 onion, small dice
5 stalks celery, small dice
4 carrots, peeled and small dice
2 1lb sugar pumpkins
8 cups broth, (vegetable or chicken)
2 cups water
1 ½ cups lentils
fresh thyme
Kosher salt and black pepper
In a frying pan saute onions, celery, and carrots till tender. Add the pumpkin, and the broth andthe water with the Lentils. (these lentils if not already soft these lentils should be let to soak for three-four hours). Let the the mixture boil for 15 minutes. Stirring consistantly. After the 15 minutes add thymethen bring to a simmer and cover for another 15minutes. Let sit for ten minutes covered and then serve. This is a delicous way to get pumpkin, as well as potein rich lentils into your fall diet ENJOY !
