Food trucks aren ' t just for big cities anymore— these days, you ' re as likely to see them in southeastern Kentucky as anywhere else. From community events( including the City of Somerset ' s Foodstock, which exclusively features food trucks) to hotspots along the highway where people are likely to pull over and get a bite of lunch, food trucks are becoming more and more visible in this area. Following are some of the most popular options out on the road, offering a wide variety of food, beverages, and tasty treats.
Mericana Food Truck
Chef Jason Richardson decided a while back to combine his love of the culinary arts and business management with his love for his country to form a veteran-owned food truck that offers a variety of thoughtfully created and professionally made dishes.
So was born the Mericana Food Truck, which can be seen about the area serving an evergrowing fan base for his personally-crafted dishes.
Richardson said he consistently posts on social media at the beginning of the week and the day of and day prior regarding each location where his food truck will be parked.

concept has been simmering in Richardson ' s mind for over 20 years.
" I worked in the restaurant business a lot over the years, and ended up joining the military," he recalled. There, he considered the idea of a military version of a food truck.
