She puts in seven days a week, pre-dawn to post-dusk, everything from rolling dumplings at 5 a. m., to doing prep and paperwork on Wednesday, the only day the restaurant is closed.
When asked why she puts in so much extra work, she said it ' s all about family.
" Got to take care of them kids!" she laughed.
In addition to her customer family, Kephart ' s own family includes: husband Robbie, daughter Alexis, sons Seth, Severin, and Dallas, and granddaughters Octavia, Riley, Lila, Kylina, and Ava.
Kephart and her staff not only serve some of the favorites of country cooking and modern American dining staples, but they also serve it with a neighborly smile and a warm attitude that lets you know they are truly glad you ' re there.
So when you visit The Salty Hen and end up feeling a bit like you ' re home, Kephart would probably say " Well, it ' s because you are home."
