produces the coffee’s characteristic flavour
and it is also during this process that the
beans’ flavour profiles can be manipulated.
Wyndhams describes coffee roasting as
both an art and a science, with meticulous
attention being paid to every aspect of
the roasting process. The result is unique,
Bajan hand-crafted, premium coffee beans,
that are as delicious as they are fragrant.
Wyndhams offers single-source coffee
beans (beans sourced from coffee grown
within a single, known geographic origin)
as well as unique specialty blends.
Needless to say, this process that coffee
beans go through, to become the steaming,
fragrant morning staple they are known
to be, is an extensive one. So extensive,
in fact, that a detailed account of a coffee
bean’s journey is far beyond the scope of
this article. However, suffice to say, there’s
a lot of time, energy and expertise devoted
to crafting the perfect cup of coffee.
This is why Dominic is completely
against the “takeaway culture” that has
become so pervasive, when it comes to
coffee consumption. “Most people treat
coffee as a way of getting caffeine into
their systems” he commented, “but
coffee is really meant to be enjoyed.”
Like our American counterparts, where
over 65% of coffee drinkers consume
their daily cup of joe at breakfast as a
morning pick-me-up, Dominic believes
that this is the primary reason Barbadians
consume coffee as well. Subsequently, the
takeaway model evolved so that coffee
drinkers could grab their daily shot of
caffeine on their way to start their day.
However, this concept of coffee-on-the-
go, Dominic asserts, is harmful to the
environment and takes away from much
of the coffee-drinking experience.
“If all you want is
caffeine, go drink a
coke or a red bull or
something .
Coffee is meant to be
the one moment in
your hectic, busy day
that you take a break,
relax and collect your
thoughts,” articulates,
Dominic.
“I mean, just look at how complex and
detailed the coffee-making process is; to
then put the hard work of so many people,
into a paper cup so you can rush it down
and go about your day is almost a shame.”
As I lifted the coffee mug at
Wydham’s, and drained the last bit
of my cappuccino, Dominic asks,
“Would you like another cup?”
