1 tablespoon red wine vinegar
4 tablespoons fresh lime juice
2 tablespoons extra-virgin olive oil
11/4 teaspoons kosher salt
1/2 teaspoon freshly ground black
pepper
Two (15-ounce) cans black beans,
drained and rinsed
One (17-ounce) can whole kernel corn,
drained and rinsed
3 large tomatoes, diced
1/2 cup red onion, diced
1/2 cup fresh cilantro, chopped
2 large avocados, diced

In a large bowl, whisk together red wine vinegar, lime juice, olive oil, salt, and pepper.
Add black beans, corn, tomato, red onion, and cilantro and mix to evenly combine. Gently fold
in avocados.
Chill in the refrigerator for one hour before serving to allow flavors to combine.
