Ingredients Instructions
3 lbs. chicken wings, separated
into wingettes and drummers,
tips discarded 1) Combine all ingredients for the
marinade in a large Ziploc bag.
Close the bag and shake very well.
2) Add the chicken wings, close the bag
and massage the wings very well to ensure
good coverage. Expel as much air as you can,
close bag and refrigerate for at least 2 hours,
preferably overnight and up to 24 hours.
3) Preheat grill to about 350˚F - 400˚F.
4) Remove the chicken wings from the
marinade and pat dry with a paper towel.
5) Brush the preheated grill grate
with cooking oil to prevent sticking.
6) Cook the chicken wings on the grill,
lid closed for about 10-15 minutes each side,
until the meat is nicely browned and the juices
run clear. Using an instant read thermometer
can help determine if the chicken is ready. They
are ready when the temperature reads 165˚F.
For the marinade
¼ cup light soy sauce
3 cup dark soy sauce
3 tbsp vinegar
½ cup olive oil (or vegetable oil)
2 tsp granulated onions
2 tsp dried oregano
1 tsp kosher salt
1 tsp granulated garlic
1 tsp dried parsley
1 tsp black pepper
¼ tsp dried thyme
¼ tsp dried basil
½ tsp cayenne pepper

Chicken Tacos
Ingredients:
1 Rotisserie Chicken, deboned
and shredded
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons olive oil
2 teaspoons ground cumin
1 teaspoon smoked paprika
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon chipotle chili powder

Quick Chipotle
Lime Crema
Load the wings on the
pre-heated grill
and close the lid.
Ingredients:
Grill on one side for
10-15 minutes.
Open the lid, flip the wings
onto other side.
Continue cooking for
10-15 minutes.
Remove from the grill
and enjoy.

1/2 red onion, finely diced
1/4 cup fresh cilantro, chopped
1 lime, juiced
