SUMMER 2017 | Master the Grill: How to Cook the Perfect Steak | 40 How to Cook the Perfect Steak Follow these simple steps to sizzling success: S T E A K S Prep Time: 20 minutes Cook Time: 40 minutes Servings: 12 Start with a hot grill. Sear beef to develop flavor. Turn steaks gently with tongs; never pierce with a fork. Ensure juiciness by flipping steaks only once, if possible. Assess doneness with an instant-read thermometer. Keep food safety in mind. Wash anything that touches raw meat. Set steaks aside to rest a few minutes before serving. Tip: Season steaks generously with salt and pepper before cooking – that’s all you need to enhance beef’s natural flavor. SUMMER IS BUSH’S SEASON Grilled Ribeye Steak* with Herbed Steak Butter ® ½ can (21.5 oz) BUSH’S ® Honey Chipotle Grillin’ Beans ® 1 can (15 oz) BUSH’S ® Black Beans, drained and rinsed 1 cup grilled corn kernels 6 large poblano chiles 2 Tbsp extra-virgin olive oil 1 medium onion, finely chopped 2 jalapeños, seeded and chopped ½ red bell pepper, finely chopped 1 tsp cumin 4 (10-oz.) Certified Angus Beef ® ribeye steaks ½ lb. unsalted butter, softened 1 tbsp roasted garlic 1 tbsp kosher salt 1 tsp freshly ground black pepper 1 tsp finely chopped shallots 1 tsp finely chopped fresh parsley 1 tsp finely chopped fresh sage 1 tsp finely chopped fresh rosemary Salt and freshly ground pepper to taste DIRECTIONS ½ cup fresh cilantro leaves 1 tsp favorite hot sauce 12 oz pepper jack or Monterey jack, coarsely grated (or sub for your preferred low-fat grated cheese) You’ll also need 1½ cups hardwood chips or chunks, or smoker box 1. 2. Place beans and grilled corn in large mixing bowl. Set aside. Cut poblano chiles in half lengthwise to create boat for filling; scrape out seeds. 3. Heat olive oil in nonstick skillet and add onion, jalapeños, red bell pepper and cumin. 4. Cook over medium heat until golden brown, about 4 minutes. 5. Stir mixture into bowl with beans a nd corn; add cilantro, hot sauce and half the cheese. 6. Spoon mixture into hollowed chiles and top with remaining cheese. 7. Set up grill for direct grilling and preheat to medium-high. Add wood chips to coal or grill’s smoker box. 8. Place chiles rellenos on grill grate away from heat. 9. Grill until chiles are tender and cheese is browned and bubbling, about 30-40 minutes. 10. Remove from grill and serve immediately. 11. Serve with remaining BUSH’S ® Honey Chipotle Grillin’ Beans ® on the side. Instructions 1) Thoroughly combine softened butter with garlic, salt, pepper, shallots, parsley, sage and rosemary. Roll with plastic wrap into a log shape 1-inch in diameter; refrigerate 2 hours or until butter is solid. (Note: Recipe will yield 16 butter servings; reserve 12 for later use.) 2) Season steaks with salt and pepper. Grill to desired doneness. Cut butter into 1/4-inch slices and serve over steaks. Know Your Degrees of Doneness ©2017 INGREDIENTS Ingredients To check doneness, use an instant-read thermometer inserted through the side of the cut, with the tip in the center, not touching any bone or fat. Remove steaks and burgers from the heat at 5°F lower than your desired doneness, as the temperature will continue to rise while resting. The USDA recommends steaks be cooked to 145°F and then rested for at least 3 minutes. To ensure food safety, ground beef should be cooked to a minimum 160°F.
