SPRING 2018 | Spring Chickens | 43 CREAMIEST EVER Mashed Potatoes INGREDIENTS DIRECTIONS • • • • • 2. • 6-8 Yukon Gold potatoes, peeled and quartered 2 garlic cloves, peeled and crushed Whole milk Heavy cream 1 stick butter Kosher salt and black pepper, to taste 1. 3. Add potatoes to pot along with enough milk to cover potatoes halfway, then add enough cream to completely cover the potatoes. Add garlic cloves. Bring to a boil and cook until tender. When potatoes are done, drain them in a colander, with a bowl underneath. Place potatoes back into the cooking pot. Mash potatoes. Add cupfuls of the reserved hot milk/cream as you mash, until you reach desired consistency. Add butter and salt and pepper to taste.
