SPRING 2018 | Weekends Were Made for Brunch | 15 capreseavocado toast INGREDIENTS • • • • • • • • 1 cup grape tomatoes, halved 1 cup BelGioioso Mozzarella Pearls, halved ¼ cup fresh basil, chopped 1 tsp plus 1 tbsp olive oil Kosher salt and fresh ground black pepper, to taste 1 avocado, pitted and mashed 4 slices crusty bread 4 whole eggs DIRECTIONS 1. 2. 3. 4. In a medium mixing bowl, combine tomatoes, mozzarella pearls, basil and 1 tsp olive oil. Sprinkle with salt and pepper. Cover and let sit at room temperature for 25 minutes. Heat remaining tbsp of olive oil in a skillet over medium heat. Cook eggs just until the whites are cooked, 1-2 minutes per side. Toast bread if desired. To assemble the toast, spread avocado on bread, add fried egg, and top with 1/4 of the caprese mixture. Repeat with remaining ingredients until 4 toasts are made. Serve immediately.
