½ cup dried quinoa ½ cup black beans , drained and rinsed ½ red pepper , diced ½ avocado , sliced Pinch of parsley , chopped ¼ cup corn ½ red onion , diced 6 cherry tomatoes , halved 2 tbsp rice wine vinegar
directions :
1 . Cook quinoa according to package instructions . 2 . Top with black beans , red pepper , avocado , parsley , corn , onions and cherry tomatoes . 3 . Splash with the rice wine vinegar .
