INGREDIENTS DIRECTIONS
2 1/2 cups Daisy Cottage Cheese, divided
2 tbsp. honey
1/3 cup Daisy Sour Cream
1/2 cup milk
1/4 cup melted butter
2 large eggs
2 tbsp. grated lemon zest
2 tbsp. lemon juice
1 3/4 cups all purpose flour
3 tbsp. sugar
1 tsp. baking powder
1 1/4 cup raspberries 1. Combine 1 cup cottage cheese and honey. Set aside.
2. Add 1 1/2 cups cottage cheese, sour cream, milk and
butter to food processor; process until smooth.
3. Add eggs, lemon peel and lemon juice; pulse until blended.
4. Add flour, sugar and baking powder; pulse until combined
(batter will be thick).
5. Heat griddle over medium heat until hot; lightly spray
with nonstick cooking spray.
6. Using 1/4 cup per pancake, pour batter onto griddle.
Cook 2 to 3 minutes or until bubbles pop on the surface
and underside is golden brown.
7. Turn and cook 1 minute or until brown.
8. Repeat with the remaining batter.
9. Top each serving with reserved cottage cheese.
Garnish as desired.
