Limeade

( serves 4 )
Everyone knows and loves lemonade , but how about we change things up this summer with an equally-refreshing but slightly more exotic versions of this classic favourite . Limes give a sweeter flavour profile , but still giving you the thirst-quenching satisfaction .
Instructions
Ingredients :
• 1 cup lime juice
• Half or three quarters of a cup of sugar
• Half a cup water
• A handful of sliced strawberries
• 20 - 30 mint leaves
1 . Start by making a simple lime syrup . Combine the sugar , water and lime juice in a saucepan , and cook over medium high heat for five to ten minutes until the sugar is dissolved and the liquid is clear .
2 . In a shaker or large clean jar , combine the limey simple syrup , strawberries , mint and a dash of water . Shake it up and then let sit in the refrigerator for two to three hours to infuse .
3 . Pour equally ( to taste ) into ice-filled glasses and top up with sparkling water .
4 . Garnish with more strawberries and mint . Serve and enjoy !
TIP : When preparing to serve the limeade , you can add your favourite clear spirit . We find that a clear gin works best . Yum !

• A handful of ice
