Huevos Rancheros

3 eggs one 16 oz can diced tomatoes and green chiles ½ cup onion , chopped 1 / 2 Tbsp olive oil ¼ tsp garlic powder ¼ tsp pepper ¼ tsp dried oregano 1 / 8 cup Monterey jack cheese , shredded 1 / 8 cup Parmesan cheese , shredded 3 corn tortillas Optional garnish : avocado slices
Directions
1 . Heat oil on medium high heat in a large skillet with lid . Add onion and sauté until softened and translucent , but not brown . Add tomatoes and chiles , garlic powder , pepper , and oregano . Reduce heat to medium and simmer for 5 minutes , stirring occasionally .
2 . Make 3 holes in the ranchero sauce and gently crack an egg in each opening . Top eggs with cheese . Cover and cook until eggs are set , and cheese is melted , 5 to 8 minutes .
3 . Using a spatula , serve egg on top of a warmed corn tortilla . Top egg with remaining Ranchero sauce . Garnish with avocado slices .
