Blackened Salmon with Cucumber Dill Relish
1 lb salmon filet ½ Tbsp olive oil ½ tsp black pepper ½ tsp garlic powder ½ tsp onion powder ½ tsp smoked paprika ¼ tsp cayenne pepper ½ tsp Italian Seasoning ¼ tsp salt
Cucumber Dill Relish ½ cup light sour cream 1 Tbsp white wine vinegar 1 Tbsp fresh dill , finely chopped ½ tsp black pepper ¼ tsp salt ½ tsp sugar 1 cucumber , diced ¼ cup red onion , finely chopped
Directions
1 . Preheat oven to 450 degrees . 2 . Rub salmon with olive oil and spices . Place salmon on a foil-lined baking sheet ( skin side down ). Bake salmon for 10-15 minutes until salmon is cooked through .
3 . While the salmon is in the oven , prepare the cucumber dill relish . Whisk together the light sour cream , vinegar , dill , pepper , salt , and sugar in a medium bowl . Stir in the cucumbers and red onion . Refrigerate until ready to serve .
4 . Remove salmon from the oven . Top with cucumber dill relish .
