Beef Tenderloin with Chimichurri Sauce

Beef Tenderloin with Chimichurri Sauce
3 to 3 ½ lbs beef tenderloin 1 Tbsp avocado oil ½ tsp black pepper ½ tsp garlic powder ½ tsp onion powder ¼ tsp salt
Directions :
1 . Preheat oven to 425 degrees . 2 . Rub all sides of beef with oil and spices .
3 . Bake in preheated oven for 25 to 30 minutes or until meat thermometer registers 140 degrees ( medium ).
4 . Remove from oven and cover loosely with foil allowing the meat to rest for 15 minutes . Slice and top with chimichurri sauce .
Chimichurri Sauce 1 cup fresh parsley 1 Tbsp fresh oregano 4 garlic cloves , minced ¼ tsp crushed red pepper flakes ¼ cup red wine vinegar ½ tsp kosher salt ½ tsp black pepper ½ cup avocado oil
Directions :
1 . Place parsley , oregano , garlic , crushed red pepper flakes , and red wine vinegar into a food processor and pulse until chopped , but not pureed . If you do not have a food processor you can finely chop the parsley , oregano , and garlic and stir in the crushed red pepper flakes , and red wine vinegar .
2 . Transfer into small bowl and stir in salt , pepper , and avocado oil . Store in refrigerator until ready to serve .
