Hamam mahshi Pigeon ( hamam ) is an Egyptian delicacy . Served in this traditional style , the bird is roasted and stuffed ( mahshi ) with a mixture of cinnamon and cumin-spiced rice or cracked green wheat .
Molokhiya Both the name of the jute-leaf plant , used as a foodstuff in Egypt since the pharaonic era , and of the jute-leaf soup , molokhiya is one of Egypt ’ s most beloved dishes . This dark green soup is liberally flavoured with garlic and cilantro , and usually served with a side dish of rice .
