Fun fact: In the summer months, many towns across Malta
and Gozo celebrate their patron saints with lavish festas, which last several days. These typically involve fireworks and marching bands, and see the streets draped in colourful decorations.

Meanwhile, Charles steps back inside and returns with a gbejna. He picked it up from a nearby farmer just before my visit and drizzled it with oil. The creamy tanginess of the cheese blends perfectly with the nuttiness of the oil and it all melts together in my mouth: a simple pairing packed with pure, unfiltered flavour.
