FINE DINING : SEABOURN ANNOUNCES NEW CULINARY EXPERIENCE
Having launched on Seabourn Quest in January 2024 , Solis restaurant ’ s high-end menu pays tribute to the destinations the vessel visits on its Mediterranean sailing . The expedition cruise line is aiming to add an extra dimension to its luxury offering , which will be rolled out across Encore , Ovation and Sojourn by spring 2024 . The rollout features chefs with years of Michelinlevel experience and a passion for travel , including Austrian chef Anton ‘ Tony ’ Egger , who ’ s already the brains behind Seabourn ’ s two most popular onboard concepts , Earth & Ocean and Sushi . The new menu at Solis will serve dishes merging the expertise of the French Riviera , the fresh flavors of the Greek isles and the high-quality ingredients of the central Mediterranean : think horiatiki Greek village salad with barrel-aged feta cheese and pickled red shallots , and a Tuscan-style 32-ounce porterhouse steak with a vegetable and new potato casserole .
