SPOTLIGHT: 21C MUSEUM HOTEL, LOUISVILLE, Kentucky
Equal parts museum, hotel and culinary hub, the collection of boutique hotels in the 21c portfolio are a hive for creatives. Each hotel hosts rotating exhibitions that showcase its collection of over 5,000 artworks sourced across the globe. With the exhibitions open to the public, the brand is making art accessible in the spirit of community and celebration.
The brand’ s flagship property, 21c Museum Hotel in Louisville, is contributing to the city’ s already impressive reputation for the arts. The hotel is hosting‘ This We Believe,’ an installation of sculptures, textiles and multimedia displays, which examine American mythology and nationalist identity.
Meanwhile, the hotel’ s restaurant, Proof on Main, has been designed by artists David Allen Burns and Austin Young, aka Fallen Fruit, who captured the agrarian, environmental and cultural characteristics of Kentucky in the decor. Its menu emphasises the Ohio River Valley region with ingredients from nearby farms and producers, plus a catalogue of more than 120 bourbons.

Luxury cruise line Cunard has announced a partnership with British chef Nathan Outlaw on select Mediterranean voyages. Outlaw— known for Outlaw’ s Fish Kitchen, a Michelin-starred restaurant on England’ s north Cornwall coast— will prepare fivecourse seafood tasting menus on four cruises aboard Queen Victoria, departing between July and September 2025.
The collaboration will feature live cooking demonstrations, question-andanswer sessions in the ship’ s Royal Court Theatre and intimate 60-guest dining experiences. In keeping with the cruise itineraries, Outlaw’ s menus will feature Mediterranean ingredients.
Outlaw makes his debut on Queen Victoria during a 14-night voyage from Barcelona to Rome. Departing Barcelona on July 7, he’ ll sail for the first week of the cruise. This partnership follows the announcement of a collaboration with another super-chef, Michel Roux Jr. who will host a series of dinners on four Fjords voyages in 2025. These will be a tribute to Le Gavroche, the London restaurant his family ran for 57 years. spring 2025 • 13
