EVENING Go for pre-dinner drinks at one of the city’ s best cocktail bars, Le Bijou, just off Rue Saint-Jean, which has a playful, colour-drenched interior. The drinks here are themed around childhood memories. Try evocative tipples like the Soleil de Provence, meant to conjure memories of Mediterranean summers with gin, lavender, lemon and pear cider. For the grand finale, only one restaurant will do— Tanière ³. Set in the 17th-century vaults, steps away from Place Royale, this fine-dining spot is the sole proprietor of two Michelin stars in Québec. Chef François-Emmanuel Nicol’ s tasting menu is inspired by his province’ s boreal zone, so expect forest-plucked ingredients such as morels, wild rose or ash pepper. Meals are 12-18 courses and span several hours, so come hungry.
