CRUSHED FINGERLING POTATOES WITH OSETRA CAVIAR

INGREDIENTS 10 oz fingerling potatoes, unpeeled( four large potatoes) 4 tbsp butter 2 tbsp chives, chopped fine sea salt black pepper 4 tbsp osetra caviar 4 tbsp sour cream images: explora journeys
Method
1 Cook the potatoes( skin on) in salted water. Drain the water and peel the potatoes while they’ re still warm. Crush them with a fork and add the butter.
2 Add the chopped chives and season to taste with salt and pepper.
3 Spoon the warm potato mixture onto a serving plate and top with the caviar.
4 Pour the sour cream around the potatoes and serve. fall 2025 • 75
