Top four: MICHELIN-STARRED RESTAURANTS

1Samrub Samrub Thai

Headed by famed local chef Prinn Polsuk, this four-story restaurant has one Michelin star and a menu that changes twice a month. Dishes always focus on the food from the often-overlooked regions of the kingdom, ferreted out by Prinn and his wife and head of service, Mint, on their many travels.

2 Aksorn

Set on the top floor of local retail institution Central Shopping Mall’ s first building, Aksorn’ s kitchen is helmed by chef David Thompson, formerly of one-Michelin-star Nahm. Unlike Nahm, this Michelin-starred restaurant draws inspiration from the recipes of aristocratic Thai families, culled from‘ funeral cookbooks’ given out by the families of the deceased.

3 Recently the recipient of two Michelin stars, chef Chudaree‘ Tam’ Debhakam is arguably one of Bangkok’ s biggest stars. At her former family home, diners are treated to a garden tour before sitting down to a multicourse menu that changes regularly. All dishes are inspired by Tam’ s travels through Thailand and the produce of high-quality farming. images: awl images; getty; stockfood

4 Coda

Chef Supasit‘ Tap’ Kokpol combines his Thai heritage with his experience living in Australia for a decade, crafting a quirky, interesting menu. He surprises diners with recurring dishes like his take on som tum( green papaya salad), served as a sorbet, and the apres-dessert flourish of duck porridge, inspired by a late night at a streetside rice porridge shop when he was still hungry after a fine dining meal. fall 2025 • 53
