Okonomiyaki This pancake-like dish is made to order from a combination of batter , shredded cabbage , and a customized selection of seafood , meat and vegetables , either added on top ( Hiroshimastyle ) or mixed in before cooking ( Osaka-style ).
Katsuo no tataki A traditional dish from the city of Kochi , katsuo no tataki is freshly caught raw bonito tuna hand-seared over an open straw flame then sliced and served with salt , sliced raw garlic , ginger and green onion .
Eomuk These simple fish cakes from Busan have been a Korean staple since the early-1700s Joseon period but gained popularity after the Korean War . Try them in soup , on a stick , or stir-fried in a spicy red sauce as eomuk-bokkeum .
