Southern Cornbread Dressing by Martha Rumsey
6 c . Crumbled cornbread
1 c . Onion finely diced
4 c . Crumbled biscuits
1 c . Celery , finely diced
1 pkg . Herb seasoned stuffing mix
6 or more c . Chicken or turkey stock
1 tsp . Pepper
2 tsp . salt
1 / 2 c . margarine , melted
Sage or poultry seasoning to taste .
Sauté onions and celery until tender . Combine all liquid ingredients , add to dry ingredients and mix lightly . Use enough stock to make a very moist dressing . Bake in a pan at 425 for 30 minutes . This dressing is good if onions and celery are baked in cornbread and if cornbread and biscuits are left out to dry before adding stock .
