Broccoli Casserole
3 tablespoons butter 1 onion , chopped 2 ( 10 ounce ) packages chopped frozen broccoli , thawed 1 ( 10.75 ounce ) can condensed cream of mushroom / chicken soup 1 cup shredded sharp Cheddar cheese 1 cup mayonnaise 2 eggs , beaten ½ teaspoon garlic salt ¼ teaspoon ground black pepper ½ teaspoon seasoned salt 12 buttery round crackers , crushed fine 2 tablespoons butter

Q . What is your favorite Christmas memory ? A . My favorite memory when I was little was being so excited on Christmas Eve night , but yet still very concerned that a big bearded man would be sneaking into my house while I was asleep . Now my favorite thing is getting to watch my children on Christmas morning !
Q . Most memorable gift given or received ? A . The most memorable gift was my first Christmas being married when I gave my husband two lab puppies for Christmas . He was surprised when I brought the first one in , but then he was REALLY surprised when I brought the second one in !

Preheat oven to 350 degrees
Melt 3 tablespoons butter in a medium skillet over medium-high heat . Sauté onion until golden
In a 2-quart casserole dish , mix together onion , broccoli , soup , cheese , mayonnaise , eggs , garlic salt , pepper , seasoned salt , and lemon juice . Sprinkle crushed crackers over top and dot with remaining 2 tablespoons butter
Bake uncovered in preheated oven for 45 minutes , until heated through and browned on top
Q . Your part in the Christmas Play ? A . I don ’ t remember much and neither does my mom , but she said I did lots of singing .
Q . All-Out Christmas decorations or Sweet and Simple ? A . Sweet and Simple before I had children , now its ALL-OUT for sure !
Q . What is your family ’ s Christmas tradition ? A . We stay home and let our children enjoy their gifts for a little bit . Then we go to our family ’ s house in Mountain City for a big breakfast and to enjoy each other ’ s company for a while . Then we have a big spread for Christmas dinner at our other family ’ s house .
