Q . What ’ s your favorite Christmas memory ? A . When I think of my best Christmas it would have to be the year we brought our 1st granddaughter home from the hospital . Santa came to see her the next day .
Q . What gift stands out in your memory as the best ? A . My dad , Ray Rumsey built a small steel car with a motor on it for me and my brother Tommy , that was one of the best gifts ever .
Q . Do you have a favorite Christmas Carol ? A . I really like the Little Drummer Boy
Q . How do you and your family decorate for the holidays ? A . We prefer sweet and simple decorations .
Q . What Christmas tradition does your family have ? A . We always read the story of Jesus ’ birth . It helps keep our focus on the reason for the season !
Q . Is there a recipe that you ’ d like to share ? A . Yes , my mom ’ s dressing recipe is always on our holiday table whether it ’ s Thanksgiving or Christmas .
Southern Cornbread Dressing by Martha Rumsey
6 c . Crumbled cornbread |
1 c . Onion finely diced |
4 c . Crumbled biscuits |
1 c . Celery , finely diced |
1 pkg . Herb seasoned stuffing mix |
6 eggs |
6 or more c . Chicken or turkey stock |
1 tsp . Pepper |
2 tsp . salt |
1 / 2 c . margarine , melted |
Sage or poultry seasoning to taste . |
Sauté onions and celery until tender . Combine all liquid ingredients , add to dry ingredients and mix lightly . Use enough stock to make a very moist dressing . Bake in a pan at 425 for 30 minutes . This dressing is good if onions and celery are baked in cornbread and if cornbread and biscuits are left out to dry before adding stock .
